Chocolate Almond Cheesecake Cake

Ingredients:
For the Chocolate Cake:
2 cups all-purpose flour
2 cups granulated sugar
3/4 cup unsweetened cocoa powder
2 teaspoons baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 cup buttermilk
1/2 cup vegetable oil
2 large eggs
2 teaspoons vanilla extract
1 cup hot water

For the Almond Cheesecake Layer:
16 oz cream cheese, softened
1/2 cup granulated sugar
2 large eggs
1 teaspoon almond extract

For the Ganache:
1 cup semi-sweet chocolate chips
1/2 cup heavy cream
1/2 teaspoon almond extract

Directions:
1.  Prepare the Chocolate Cake:
– Preheat oven to 350°F and grease two 9-inch round cake pans. Line the bottoms with parchment paper.
– In a large bowl, whisk together flour, sugar, cocoa powder, baking soda, baking powder, and salt.
– Add buttermilk, oil, eggs, and vanilla. Mix until combined. Slowly stir in hot water until the batter is smooth.
– Divide the batter evenly between the prepared pans. Bake for 25-30 minutes, or until a toothpick comes out clean. Let cool completely.

2.  Make the Almond Cheesecake Layer:
– Preheat the oven to 325°F. Line the bottom of a 9-inch springform pan with parchment paper and grease the sides.
– Beat cream cheese and sugar until smooth. Add eggs, one at a time, mixing well after each addition. Stir in almond extract.
– Pour the mixture into the prepared pan and bake for 40-45 minutes, or until set. Let cool completely.

3.  Make the Ganache:
– Heat heavy cream in a saucepan until it just begins to simmer. Remove from heat and pour over chocolate chips. Let sit for 2-3 minutes, then stir until smooth. Stir in almond extract.

4.  Assemble the Cake:
– Place one chocolate cake layer on a serving plate. Top with the almond cheesecake layer.
– Place the second chocolate cake layer on top of the cheesecake layer.
– Pour the ganache over the top, letting it drip down the sides for a stunning finish.

5.  Decorate and Serve:
– Garnish with sliced almonds or chocolate shavings, if desired.
– Chill for 30 minutes before slicing for neat cuts. Enjoy!
