Ingredients:
For the crust:
– 2 cups chocolate cookie crumbs
– 1/2 cup unsalted butter, melted
For the filling:
– 16 oz cream cheese, softened
– 1 cup powdered sugar
– 8 oz semi-sweet chocolate, melted and cooled
– 1 teaspoon vanilla extract
– 1 1/2 cups heavy whipping cream
Directions:
1. Prepare the crust:** In a medium bowl, combine chocolate cookie crumbs and melted butter. Press the mixture firmly into the bottom of a 9-inch springform pan. Refrigerate while preparing the filling.
2. Make the filling:** In a large bowl, beat the cream cheese and powdered sugar until smooth and creamy. Add the melted chocolate and vanilla extract, mixing until well combined.
3. In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully incorporated.
4. Spread the filling evenly over the crust. Smooth the top with a spatula. Cover and refrigerate for at least 6 hours, or overnight, until firm.
5. Remove from the pan, slice, and serve with your favorite toppings, such as whipped cream, chocolate shavings, or fresh berries.
