Lemon Bars

Ingredients:
For the crust:
– 1 ½ cups all-purpose flour
– ⅓ cup powdered sugar
– ¼ teaspoon salt
– ¾ cup unsalted butter, cold and cubed
For the filling:
– 4 large eggs
– 1 ½ cups granulated sugar
– ¼ cup all-purpose flour
– ½ teaspoon baking powder
– ¼ cup fresh lemon juice (about 2 lemons)
– Zest of 1 lemon
– Powdered sugar, for dusting
Directions:
1. Preheat the oven to 350°F (175°C). Grease and line an 8×8-inch baking pan with parchment paper.
2. For the crust, combine the flour, powdered sugar, and salt in a medium bowl. Add the cold butter and mix until the dough comes together. Press the dough evenly into the bottom of the prepared pan.
3. Bake the crust for 15-18 minutes, or until lightly golden. Remove from the oven and set aside to cool slightly.
4. For the filling, whisk together the eggs, granulated sugar, flour, baking powder, lemon juice, and lemon zest in a bowl until smooth.
5. Pour the filling over the slightly cooled crust and return to the oven. Bake for 20-25 minutes, or until the filling is set and no longer jiggles in the center.
6. Let the bars cool completely in the pan on a wire rack. Once cooled, dust with powdered sugar and slice into squares.
7. Serve and enjoy!
