For the Chocolate Frosting:
1 cup unsalted butter, softened
3 1/2 cups powdered sugar
1/2 cup unsweetened cocoa powder
1/4 cup heavy cream
1 teaspoon vanilla extract
Directions:
1. Prepare the Cake Layers:
– Preheat oven to 350°F and grease and flour two 9-inch round cake pans.
– In a large bowl, sift together flour, sugar, cocoa powder, baking soda, baking powder, and salt.
– Add buttermilk, vegetable oil, eggs, and vanilla extract. Mix until combined.
– Stir in hot coffee until the batter is smooth. Pour evenly into prepared pans.
– Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean. Cool completely.
2. Make the Caramel Pecan Filling:
– In a saucepan, combine sugar and water. Cook over medium heat, without stirring, until the sugar turns amber.
– Carefully whisk in warmed heavy cream and butter until smooth. Stir in vanilla and chopped pecans. Let cool.
3. Prepare the Chocolate Frosting:
– Beat softened butter until creamy.
– Gradually add powdered sugar and cocoa powder, alternating with heavy cream, until smooth and fluffy. Stir in vanilla extract.
4. Assemble the Cake:
– Place one cake layer on a serving plate and spread half the caramel pecan filling over the top.
– Place the second cake layer on top and spread the remaining caramel pecan filling.
– Frost the sides and top of the cake with chocolate frosting.
5. Decorate and Serve:
– Garnish with additional pecans or a drizzle of caramel if desired.
