Ingredients:
For the Cookies:
1 box brownie mix
1/4 cup all-purpose flour
1/4 cup vegetable oil
2 large eggs
For the Peanut Butter Filling:
3/4 cup creamy peanut butter
3/4 cup powdered sugar
For the Chocolate Topping:
1 cup semi-sweet chocolate chips
1 teaspoon vegetable oil
Directions:
1. Prepare the Cookies:
– Preheat your oven to 350°F and line a baking sheet with parchment paper.
– In a mixing bowl, combine the brownie mix, flour, vegetable oil, and eggs until a thick dough forms.
– Roll the dough into 1.5-inch balls and place them on the prepared baking sheet, spaced about 2 inches apart.
– Flatten each ball slightly with the bottom of a glass. Bake for 10-12 minutes and let cool completely.
2. Make the Peanut Butter Filling:
– In a medium bowl, mix the peanut butter and powdered sugar until smooth and rollable.
– Form small balls (about 1 teaspoon each) from the mixture and slightly flatten them into discs.
– Place one disc on top of each cooled cookie.
3. Prepare the Chocolate Topping:
– In a microwave-safe bowl, melt the chocolate chips and vegetable oil in 30-second intervals, stirring until smooth.
– Spoon or drizzle the melted chocolate over the peanut butter layer on each cookie, letting it drip down the sides.
4. Chill and Serve:
– Refrigerate the cookies for 20-30 minutes to set the chocolate.
– Serve at room temperature and enjoy!
