Ingredients
– 2 1/2 cups granulated sugar
– 1/2 cup unsalted butter
– 3/4 cup evaporated milk
– 1 teaspoon vanilla extract
– 2 cups pecans, roughly chopped
– 1 1/2 cups sweetened shredded coconut
Directions
1. Line a baking sheet with parchment or wax paper and set aside.
2. In a medium saucepan, combine sugar, butter, and evaporated milk. Heat over medium, stirring constantly, until the mixture comes to a full boil.
3. Let it boil for 3 minutes, stirring frequently, then remove from heat.
4. Stir in vanilla extract, pecans, and shredded coconut until evenly combined.
5. Working quickly, drop spoonfuls of the mixture onto the prepared baking sheet.
6. Allow the cookies to cool and set at room temperature for about 20-30 minutes before serving.
