Ingredients:
For the Cake:
– 2 cups all-purpose flour
– 2 cups granulated sugar
– 3/4 cup unsweetened cocoa powder
– 2 tsp baking powder
– 1 1/2 tsp baking soda
– 1 tsp salt
– 1 cup whole milk
– 1/2 cup vegetable oil
– 2 large eggs
– 2 tsp pure vanilla extract
– 1 cup boiling water
For the Ganache:
– 8 oz semi-sweet chocolate, chopped
– 1 cup heavy cream
– 2 tbsp unsalted butter
Directions:
1. Preheat your oven to 350°F. Grease and flour two 9-inch round cake pans.
2. In a large bowl, sift together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
3. Add the milk, vegetable oil, eggs, and vanilla extract to the dry ingredients. Mix until smooth.
4. Gradually stir in the boiling water. The batter will be thin—that’s normal!
5. Divide the batter evenly between the prepared pans and bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
6. Cool cakes in the pans for 10 minutes before transferring them to a wire rack to cool completely.
For the Ganache:
1. Heat the heavy cream in a saucepan over medium heat until it just begins to simmer. Remove from heat.
2. Pour the hot cream over the chopped chocolate and butter in a heatproof bowl. Let sit for 5 minutes.
3. Stir until smooth and glossy. Allow the ganache to cool slightly to thicken.
Assemble the Cake:
1. Place one cake layer on a serving plate. Spread a layer of ganache over the top.
2. Place the second layer on top and pour ganache over the entire cake, smoothing it out with a spatula.
3. Let the ganache set before slicing and serving.
