Ingredients
For the Brownie Base:
– 1 box (18.3 oz) brownie mix
– 1/2 cup vegetable oil
– 1/4 cup water
– 2 large eggs
For the Rocky Road Topping:
– 2 cups mini marshmallows
– 1 cup semi-sweet chocolate chips
– 1/2 cup chopped pecans or walnuts
– 1/4 cup caramel sauce (optional)
Directions
1. Preheat your oven to 350°F. Grease a 9-inch round cake pan and line the bottom with parchment paper.
2. Prepare the brownie mix according to the package instructions, combining the mix with oil, water, and eggs. Pour the batter into the prepared pan.
3. Bake for 30–35 minutes or until a toothpick inserted near the center comes out mostly clean. Remove the pan from the oven but leave the oven on.
4. Sprinkle the marshmallows evenly over the brownie layer, followed by the chocolate chips and nuts. Return to the oven for 5 minutes, or until the marshmallows are puffed and slightly golden.
5. Drizzle caramel sauce over the topping if desired.
6. Let the brownie cake cool completely in the pan before removing. Slice and serve.
