Cookies & Cream Cheesecake

 Ingredients
– 24 Oreo cookies (plus extra for topping)
– 1/4 cup unsalted butter, melted
– 3 packages (8 oz each) cream cheese, softened
– 1 cup granulated sugar
– 1 teaspoon vanilla extract
– 3 large eggs
– 1/2 cup sour cream
– 1/4 cup all-purpose flour
– Whipped cream, for garnish
 
 Directions
1. Preheat your oven to 325°F (160°C). Line a 9-inch springform pan with parchment paper.
2. Crush 24 Oreo cookies into fine crumbs. Mix with melted butter and press firmly into the bottom of the prepared pan to form the crust. Chill for 10 minutes.
3. In a large bowl, beat the softened cream cheese until smooth. Gradually add sugar and vanilla extract, beating until combined.
4. Add eggs one at a time, mixing well after each addition. Stir in sour cream and flour until smooth.
5. Roughly chop additional Oreos and gently fold them into the cheesecake batter.
6. Pour the batter over the crust and smooth the top. Bake for 50-55 minutes, or until the center is set but slightly jiggly.
7. Turn off the oven and crack the door open, letting the cheesecake cool inside for 1 hour.
8. Chill in the refrigerator for at least 4 hours, or overnight.
9. Before serving, top with whipped cream and extra Oreo crumbs or pieces.
