Directions:
1. Prepare the Dough:
– In a large mixing bowl, combine flour, salt, and sugar.
– Cut in the chilled butter using a pastry cutter or fork until the mixture resembles coarse crumbs.
– Gradually add cold water, mixing until the dough comes together. Form into a ball, wrap in plastic wrap, and refrigerate for at least 30 minutes.
2. Prepare the Filling:
– In a medium bowl, mix ricotta, powdered sugar, vanilla extract, pistachios, and honey until smooth. Cover and refrigerate until ready to use.
3. Roll Out the Dough:
