Ingredients:
For the Crust:
2 cups graham cracker crumbs
1/4 cup granulated sugar
1/2 cup unsalted butter, melted
For the Cheesecake Layer:
16 oz cream cheese, softened
3/4 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1/2 teaspoon cinnamon
1 cup ricotta cheese
1/2 cup mini chocolate chips
For the Topping:
1/2 cup mini chocolate chips
1/4 cup powdered sugar for dusting
Directions:
1️⃣ Prepare the Crust:
Preheat the oven to 350°F (175°C) and line a 9×13-inch baking dish with parchment paper.
In a medium bowl, combine the graham cracker crumbs, sugar, and melted butter. Mix until the texture resembles wet sand.
Press the mixture evenly into the bottom of the prepared baking dish. Bake for 10 minutes, then let cool slightly.
2️⃣ Make the Cheesecake Layer:
In a large mixing bowl, beat the cream cheese and sugar together until smooth and creamy.
Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract and cinnamon.
Fold in the ricotta cheese and mini chocolate chips until evenly combined.
3️⃣ Assemble and Bake:
Pour the cheesecake mixture over the cooled crust, spreading it evenly.
Sprinkle the top with additional mini chocolate chips.
Bake for 35-40 minutes, or until the center is set and the edges are lightly golden.
4️⃣ Cool and Serve:
Allow the bars to cool completely in the pan, then refrigerate for at least 4 hours or overnight.
Dust with powdered sugar before slicing into squares.
