Irresistible Reese’s Peanut Butter Cheesecake Cookies 

 Ingredients:
For the Cookie Dough:
– ½ cup unsalted butter, softened
– ½ cup peanut butter (chunky or creamy)
– ½ cup granulated sugar
– ½ cup light brown sugar, packed
– 1 large egg
– 1 teaspoon vanilla extract
– 1 ¼ cups all-purpose flour
– ½ teaspoon baking powder
– ¼ teaspoon baking soda
– 1 cup mini Reese’s pieces
For the Cheesecake Filling:
– 4 oz cream cheese, softened
– 2 tablespoons powdered sugar
– ½ teaspoon almond extract
 Directions:
1. Preheat oven to 350°F and line a baking sheet with parchment paper.
2. Beat butter, peanut butter, granulated sugar, and brown sugar in a mixing bowl until creamy. Mix in the egg and vanilla.
3. In another bowl, combine flour, baking powder, and baking soda. Slowly incorporate dry ingredients into the wet mixture. Fold in mini Reese’s pieces.
4. Prepare the cheesecake filling by mixing cream cheese, powdered sugar, and almond extract until smooth.
5. Scoop 1 tablespoon of cookie dough, flatten, and place ½ teaspoon of cheesecake filling in the center. Top with another tablespoon of dough, sealing edges. Repeat for all cookies.
6. Arrange cookies on the baking sheet and bake for 12-14 minutes. Cool on a wire rack before enjoying.
