Ingredients:
– 1 lb sirloin steak, cut into bite-sized pieces
– 3 cloves garlic, minced
– 2 tablespoons olive oil
– 1 teaspoon smoked paprika
– Salt and pepper to taste
– 4 large eggs
– 3 cups frozen shredded hash browns
– 2 tablespoons butter
– 2 tablespoons chopped fresh parsley (optional)
Directions:
1. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the steak bites and season with smoked paprika, salt, and pepper. Cook for 2-3 minutes per side until browned but still tender. Add the minced garlic in the last minute of cooking and stir. Remove steak bites and set aside.
2. In the same skillet, add 1 tablespoon butter and the shredded hash browns. Spread them into an even layer and cook for 4-5 minutes per side until golden and crispy. Remove and set aside.
3. Heat the remaining butter in the skillet. Crack the eggs into the skillet and cook sunny-side-up or to your desired doneness. Season with salt and pepper.
4. Plate the hash browns, top with the steak bites, and add the eggs on the side. Garnish with chopped parsley if desired. Serve immediately.
