Ingredients:

For the Cake Base:
– 1 cup all-purpose flour
– 1/3 cup unsweetened cocoa powder
– 1 teaspoon baking powder
– 1/4 teaspoon salt
– 1/2 cup unsalted butter, melted
– 1 cup granulated sugar
– 2 large eggs
– 1 teaspoon vanilla extract
– 1/2 cup milk

For the Chocolate Mousse Layers:
– 6 oz dark chocolate, melted and cooled
– 6 oz milk chocolate, melted and cooled
– 6 oz white chocolate, melted and cooled
– 3 cups heavy cream, chilled
– 1/4 cup powdered sugar

For Garnish:
– Chocolate shavings
– Cocoa powder

Instructions:

1. Prepare the Cake Base:
Preheat your oven to 350ยฐF (175ยฐC). Grease and line the bottom of a 9-inch springform pan. In a medium bowl, whisk together flour, cocoa powder, baking powder, and salt. In a large bowl, combine melted butter, sugar, eggs, and vanilla until smooth. Gradually add the dry ingredients, alternating with milk, until fully incorporated. Pour the batter into the prepared pan and bake for 20โ€“25 minutes, or until a toothpick inserted in the center comes out clean. Let the cake cool completely in the pan.

2. Prepare the Mousse Layers:
In three separate bowls, melt the dark chocolate, milk chocolate, and white chocolate (using a double boiler or microwave). Allow them to cool slightly. In a large bowl, whip the chilled heavy cream with powdered sugar until soft peaks form. Divide the whipped cream equally into three portions and gently fold each portion into one of the cooled chocolates.

3. Assemble the Cake:
Spread the dark chocolate mousse evenly over the cooled cake base, smoothing the top. Refrigerate for 30 minutes to set. Repeat with the milk chocolate mousse layer, then the white chocolate mousse layer, refrigerating for 30 minutes between layers.

4. Chill the Cake:
Once fully assembled, cover the cake and refrigerate for at least 4 hours or overnight for best results.

5. Garnish and Serve:
Carefully remove the springform pan ring. Dust the top of the cake with cocoa powder and decorate with chocolate shavings. Slice and enjoy this decadent dessert.
