Chocolate Chip Cookie Dough Ice Cream Cake

Ingredients:

For the Cookie Dough:
– 1/2 cup unsalted butter, softened
– 1/2 cup brown sugar
– 1/4 cup granulated sugar
– 1 teaspoon vanilla extract
– 2 tablespoons milk
– 1 cup all-purpose flour (heat-treated)
– 1/2 cup mini chocolate chips

For the Ice Cream Layers:
– 1/2 gallon vanilla ice cream, softened
– 1/2 gallon chocolate ice cream, softened

For the Crust:
– 2 cups chocolate sandwich cookies, crushed
– 1/4 cup unsalted butter, melted

For Garnish:
– Whipped cream
– Chocolate syrup
– Additional mini chocolate chips

Instructions:

1. Make the Cookie Dough:
In a medium bowl, beat together the butter, brown sugar, and granulated sugar until creamy. Add the vanilla extract and milk, mixing until smooth. Gradually mix in the heat-treated flour until well combined. Fold in the mini chocolate chips. Roll small portions of the dough into marble-sized balls and refrigerate until firm.

2. Prepare the Crust:
Mix the crushed chocolate sandwich cookies with the melted butter until the mixture resembles wet sand. Press firmly into the bottom of a 9-inch springform pan to create an even crust. Freeze for 15 minutes to set.

3. Assemble the Ice Cream Layers:
Spread the softened chocolate ice cream evenly over the prepared crust. Scatter half of the cookie dough balls over the chocolate ice cream layer and press them slightly into the surface. Freeze for 30 minutes.
Next, spread the softened vanilla ice cream over the chocolate layer, smoothing the top. Add the remaining cookie dough balls and press them in gently. Freeze for at least 4 hours or overnight until firm.

4. Garnish and Serve:
Before serving, remove the springform pan ring. Drizzle the top with chocolate syrup, dollop with whipped cream, and sprinkle with additional mini chocolate chips. Slice and serve immediately.

Notes:
