Ingredients:
– 1 lb frozen tater tots
– 1/2 lb breakfast sausage, cooked and crumbled
– 4 large eggs, scrambled
– 1 cup shredded cheddar cheese
– 1/4 cup chopped green onions
– 1/4 cup diced bell peppers (optional)
– Salt and pepper to taste
– Hot sauce or ketchup for serving (optional)
Directions:
1. Preheat your oven to 425°F (220°C). Arrange the tater tots in a single layer on a baking sheet and bake according to the package instructions, about 20-25 minutes, until crispy and golden.
2. While the tater tots are baking, cook the breakfast sausage in a skillet over medium heat until browned and crumbled. Drain any excess grease and set aside.
3. In the same skillet, scramble the eggs over low heat until just set. Season with salt and pepper.
4. Once the tater tots are done, divide them among four bowls as the base. Top each bowl with the scrambled eggs, sausage, shredded cheese, green onions, and optional diced bell peppers.
5. If desired, drizzle with hot sauce or serve with a side of ketchup. Enjoy immediately while warm!
