Crockpot Beef Short Ribs 

Ingredients:
– 3 lbs beef short ribs
– 1/2 cup all-purpose flour
– 2 tablespoons olive oil
– 1 large onion, sliced
– 3 cloves garlic, minced
– 1 cup beef broth
– 1/2 cup red wine (or additional beef broth)
– 1/4 cup tomato paste
– 2 tablespoons Worcestershire sauce
– 1 teaspoon smoked paprika
– 1/2 teaspoon dried thyme
– Salt and pepper, to taste
Directions:
1. Season the beef short ribs with salt and pepper. Dredge them lightly in the flour, shaking off any excess.
2. Heat olive oil in a large skillet over medium-high heat. Sear the short ribs on all sides until browned (about 2-3 minutes per side). Transfer the ribs to your crockpot.
3. In the same skillet, add the onion and garlic. Sauté for 2-3 minutes until softened.
4. Stir in the beef broth, red wine, tomato paste, and Worcestershire sauce. Bring the mixture to a simmer, scraping up any browned bits from the bottom of the skillet.
5. Pour the sauce over the short ribs in the crockpot. Add smoked paprika and dried thyme.
6. Cover and cook on low for 8 hours or on high for 4-5 hours, until the ribs are tender and falling off the bone.
7. Taste and adjust seasoning if needed before serving. Serve with mashed potatoes, rice, or crusty bread.
