Cauliflower Salad 

Ingredients:
– 1 medium head of cauliflower, cut into florets
– 1/2 cup red onion, finely chopped
– 1/2 cup shredded cheddar cheese
– 1/4 cup chopped fresh parsley
– 1/4 cup bacon bits (optional)
– 1/2 cup mayonnaise
– 2 tablespoons apple cider vinegar
– 1 tablespoon Dijon mustard
– Salt and pepper to taste
Directions:
1. Bring a large pot of water to a boil. Add the cauliflower florets and cook for 2-3 minutes, until just tender but still firm. Drain and let cool.
2. In a large mixing bowl, combine the cauliflower, red onion, cheddar cheese, parsley, and bacon bits (if using).
3. In a small bowl, whisk together the mayonnaise, apple cider vinegar, Dijon mustard, salt, and pepper.
4. Pour the dressing over the cauliflower mixture and toss gently to coat everything evenly.
5. Chill in the refrigerator for at least 30 minutes before serving for the best flavor.
