Ingredients:
– 4 cups mixed greens (lettuce, spinach, arugula)
– 1 cup cherry tomatoes, halved
– ½ cup cucumber, sliced
– ¼ cup red onion, thinly sliced
– 4 ounces cooked chicken breast, sliced
– 4 ounces cooked ham, sliced
– 4 ounces turkey breast, sliced
– 2 hard-boiled eggs, sliced
– 1 cup shredded cheddar cheese
– ½ cup croutons (optional)
For the dressing:
– 3 tablespoons olive oil
– 2 tablespoons red wine vinegar
– 1 teaspoon Dijon mustard
– Salt and pepper to taste
Directions:
1. In a large bowl, combine the mixed greens, cherry tomatoes, cucumber, and red onion.
2. Add the sliced chicken, ham, turkey, and hard-boiled eggs on top of the salad.
3. Sprinkle the shredded cheddar cheese over the salad and add croutons if desired.
4. In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, salt, and pepper to make the dressing.
5. Drizzle the dressing over the salad just before serving and toss to combine. Enjoy!
