Directions:
1. In a large mixing bowl, beat the cream cheese, sugar, and vanilla extract until smooth and creamy.

3. Line a mini cupcake pan with liners and spoon the cheesecake mixture into each liner, filling them almost to the top.
4. In a separate bowl, mix the crushed golden Oreos and freeze-dried strawberries to create the strawberry crunch topping.
5. Sprinkle the strawberry crunch mixture generously over the cheesecake bites.
6. Drizzle melted white chocolate over the tops for added flavor and decoration.
7. Chill the bites in the refrigerator for at least 2 hours or until firm.
