Mango Tango Cheesecake Cake

Ingredients:
For the Mango Cheesecake Layer:
2 (8 oz) packages cream cheese, softened
1/2 cup granulated sugar
2 large eggs
1/2 cup mango puree
1 teaspoon vanilla extract

For the Cake Layers:
2 1/2 cups all-purpose flour
2 1/2 teaspoons baking powder
1/2 teaspoon salt
3/4 cup unsalted butter, softened
1 3/4 cups granulated sugar
4 large eggs
1/2 cup milk
1/4 cup mango puree
1 teaspoon vanilla extract

For the Mango Tango Frosting:
2 cups heavy whipping cream
1/2 cup powdered sugar
1/3 cup mango puree
1 tablespoon lime juice

Directions:
1. Prepare the Mango Cheesecake Layer:
– Preheat your oven to 325°F (165°C). Grease an 8-inch springform pan and line the bottom with parchment paper.
– Beat the cream cheese and sugar until smooth. Add the eggs, one at a time, beating after each addition.
– Mix in the mango puree and vanilla extract until well combined.
– Pour the cheesecake batter into the prepared pan and bake for 40-45 minutes, or until the center is just set. Let cool completely, then refrigerate.

2. Prepare the Cake Layers:
– Preheat your oven to 350°F (175°C). Grease and flour two 8-inch round cake pans.
– In a bowl, whisk together the flour, baking powder, and salt.
– In a large bowl, beat the butter and sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition.
– Gradually add the flour mixture, alternating with milk and mango puree, beginning and ending with the flour mixture. Mix in the vanilla extract.

3. Make the Mango Tango Frosting:
– In a large bowl, beat the heavy whipping cream and powdered sugar until soft peaks form.

4. **Assemble the Cake:**
– Place one cake layer on a serving plate. Spread a thin layer of frosting on top.
– Place the chilled mango cheesecake layer on top. Spread another thin layer of frosting.
– Add the second cake layer on top and frost the entire cake with the remaining frosting.
– Decorate with fresh mango slices or lime zest if desired. Refrigerate for at least 2 hours before serving.
