Ingredients:
For the Crust:
– 1 1/2 cups chocolate wafer crumbs
– 1/4 cup granulated sugar
– 1/2 cup unsalted butter, melted
For the Cheesecake Filling:
– 3 packages (8 ounces each) cream cheese, softened
– 1 cup granulated sugar
– 3 large eggs
– 1 teaspoon vanilla extract
– 1/4 cup brewed coffee, cooled
– 1/2 cup caramel sauce
For the Topping:
– 1/2 cup chocolate ganache
– 1/4 cup caramel sauce
– Whipped cream for garnish
Directions:
1. Preheat oven to 325°F (163°C). Grease a 9-inch springform pan.
2. In a medium bowl, mix the chocolate wafer crumbs, sugar, and melted butter. Press the mixture into the bottom of the prepared pan to form the crust.
3. In a large mixing bowl, beat the cream cheese and sugar until smooth. Add eggs, one at a time, mixing well after each.
4. Add vanilla extract, brewed coffee, and caramel sauce, then mix until smooth. Pour the cheesecake mixture over the crust in the pan.
5. Bake for 50-60 minutes, or until the center is set but slightly wobbly.
6. Cool the cheesecake at room temperature for 1 hour, then refrigerate for at least 4 hours or overnight to set.
7. Before serving, drizzle with chocolate ganache and caramel sauce, and top with whipped cream.
