Ingredients:
– 4 bone-in, skin-on chicken thighs
– 4 medium potatoes, cut into wedges
– 3 tablespoons olive oil
– 1 lemon, zest and juice
– 4 garlic cloves, minced
– 1 tablespoon dried oregano
– 1 teaspoon dried thyme
– Salt and pepper to taste
– Fresh parsley for garnish
Directions:
1. Preheat oven to 400°F (200°C).
2. In a large bowl, combine olive oil, lemon zest, lemon juice, garlic, oregano, thyme, salt, and pepper.
3. Add chicken thighs and potato wedges to the bowl, tossing until well coated.
4. Arrange chicken and potatoes on a baking sheet in a single layer.
5. Roast for 35-40 minutes, or until the chicken is cooked through and the potatoes are golden and crispy.
6. Garnish with fresh parsley before serving.
