Ingredients:
– 1 cup semi-sweet chocolate chips
– 3 tablespoons unsalted butter
– 2 large eggs, separated
– 1/4 cup granulated sugar
– 1 teaspoon vanilla extract
– 1 cup heavy cream, chilled
– 1 cup mixed berries (raspberries, strawberries, or blueberries)
– Fresh mint leaves for garnish (optional)
Directions:
1. Melt the chocolate chips and butter in a microwave-safe bowl, stirring every 20 seconds until smooth. Let cool slightly.
2. Whisk the egg yolks into the melted chocolate one at a time, followed by the vanilla extract. Set aside.
3. In a separate bowl, beat the egg whites until soft peaks form. Gradually add the sugar and continue to beat until stiff peaks form.
4. Gently fold the egg whites into the chocolate mixture, one-third at a time.
5. In another bowl, beat the chilled heavy cream until soft peaks form. Fold the whipped cream into the chocolate mixture until smooth and combined.
6. Divide the mousse into serving glasses and chill for at least 2 hours.
7. Before serving, top with mixed berries and garnish with fresh mint leaves if desired.
