Old Fashioned Pancakes

Ingredients:
1 1/2 cups all-purpose flour
3 1/2 teaspoons baking powder
1 teaspoon salt
1 tablespoon granulated sugar
1 1/4 cups whole milk
1 large egg
3 tablespoons unsalted butter, melted
1 teaspoon vanilla extract (optional)
Butter or oil (for cooking)

For Serving:
Maple syrup
Fresh berries (optional)
Whipped cream (optional)

Directions:
1. In a large bowl, whisk together the flour, baking powder, salt, and sugar.
2. In a separate bowl, whisk together the milk, egg, melted butter, and vanilla extract (if using).
3. Pour the wet ingredients into the dry ingredients and stir until just combined (the batter will be slightly lumpy).
4. Heat a lightly greased skillet or griddle over medium heat. Pour 1/4 cup of batter onto the skillet for each pancake.
5. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes. Flip and cook for another 1-2 minutes, or until golden brown.
6. Serve warm with maple syrup, fresh berries, and whipped cream if desired.
