 Gooey Sweet Potato Honeybun Cake 

Ingredients:
– 1 box (15.25 oz) yellow cake mix
– 1/2 cup vegetable oil
– 3 large eggs
– 1 cup mashed sweet potatoes (about 1 medium sweet potato)
– 1 teaspoon ground cinnamon
– 1/2 teaspoon ground nutmeg
– 1/4 teaspoon ground ginger
– 1/2 cup brown sugar, packed
– 1/2 cup granulated sugar
– 1 teaspoon vanilla extract
– 1/2 cup milk

For the Glaze:
– 1 cup powdered sugar
– 2 tablespoons milk
– 1 teaspoon vanilla extract

Directions:
1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
2. In a large mixing bowl, combine the cake mix, vegetable oil, eggs, mashed sweet potatoes, cinnamon, nutmeg, ginger, brown sugar, granulated sugar, vanilla extract, and milk. Stir until well combined.
3. Pour the batter into the prepared baking dish and smooth the top.
4. In a small bowl, mix together the brown sugar, cinnamon, and a pinch of nutmeg. Sprinkle this mixture evenly over the cake batter.
5. Use a knife to swirl the sugar mixture into the batter to create a “honeybun” effect.
6. Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
7. While the cake is baking, prepare the glaze by whisking together the powdered sugar, milk, and vanilla extract in a small bowl until smooth.
8. Once the cake is done, remove it from the oven and allow it to cool for about 10 minutes.
9. Drizzle the glaze over the warm cake.
10. Let the cake cool completely before cutting into squares.
