Ingredients:
For the Cake:
– 1 ¾ cups all-purpose flour
– ¾ cup unsweetened cocoa powder
– 2 cups granulated sugar
– 1 ½ teaspoons baking powder
– 1 ½ teaspoons baking soda
– 1 teaspoon salt
– 2 large eggs
– 1 cup whole milk
– ½ cup vegetable oil
– 2 teaspoons vanilla extract
– 1 cup boiling water
For the Lava Filling:
– 6 oz semi-sweet chocolate, chopped
– ½ cup heavy cream
For the Frosting:
– 1 cup unsalted butter, softened
– 3 cups powdered sugar
– ½ cup cocoa powder
– ⅓ cup heavy cream
– 1 teaspoon vanilla extract
Directions:
1. Preheat your oven to 350°F (175°C). Grease and line two 9-inch round cake pans.
2. In a large bowl, whisk together flour, cocoa powder, sugar, baking powder, baking soda, and salt.
3. Add eggs, milk, oil, and vanilla extract to the dry ingredients. Mix until smooth. Stir in boiling water (batter will be thin). Divide the batter evenly between the prepared pans.
4. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean. Cool in pans for 10 minutes, then transfer to a wire rack to cool completely.
5. For the lava filling, heat heavy cream in a small saucepan until steaming. Pour over chopped chocolate and let sit for 5 minutes. Stir until smooth and let cool to thicken.
6. For the frosting, beat butter until creamy. Gradually add powdered sugar and cocoa powder. Mix in heavy cream and vanilla extract until smooth and fluffy.
7. To assemble, place one cake layer on a serving plate. Spread lava filling on top, leaving a 1-inch border. Place the second cake layer on top. Frost the entire cake with the chocolate frosting.
8. Garnish with chocolate shavings or drizzle extra lava filling for a molten effect.
