Ingredients:
For the Chicken:
– 4 boneless, skinless chicken breasts
– 3 tablespoons olive oil
– 2 teaspoons chipotle chili powder
– 1 teaspoon smoked paprika
– 1 teaspoon garlic powder
– 1 teaspoon onion powder
– 1/2 teaspoon cumin
– 1/2 teaspoon salt
– 1/4 teaspoon black pepper
– Juice of 1 lime
For the Chipotle Ranch Dipping Sauce:
– 1/2 cup mayonnaise
– 1/4 cup sour cream
– 1 tablespoon lime juice
– 1 teaspoon chipotle chili powder
– 1/4 teaspoon smoked paprika
– 1/4 teaspoon garlic powder
– 1/4 teaspoon onion powder
– Salt and pepper to taste
Directions:
1. In a small bowl, mix olive oil, chipotle chili powder, smoked paprika, garlic powder, onion powder, cumin, salt, and pepper. Rub this mixture all over the chicken breasts.
2. Place the chicken in a shallow dish and drizzle with lime juice. Cover and marinate in the refrigerator for at least 30 minutes (or up to 4 hours for deeper flavor).
3. Preheat grill to medium-high heat. Grill the chicken for 5-7 minutes per side, or until the internal temperature reaches 165°F (74°C). Let the chicken rest for 5 minutes before serving.
For the Chipotle Ranch Dipping Sauce:
1. In a bowl, whisk together mayonnaise, sour cream, lime juice, chipotle chili powder, smoked paprika, garlic powder, onion powder, salt, and pepper until smooth. Adjust seasoning to taste.
2. Serve the sauce alongside the grilled chicken for dipping.
