Creamy Cajun Chicken Pasta
Ingredients:
12 oz fettuccine or penne pasta
2 boneless, skinless chicken breasts, sliced into strips
2 tablespoons olive oil
1 tablespoon Cajun seasoning
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 small onion, sliced
3 cloves garlic, minced
1 cup heavy cream
1/2 cup chicken broth
1/2 cup grated Parmesan cheese
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon red pepper flakes (optional)
Fresh parsley (for garnish)
Directions:
1. Cook the pasta according to package instructions until al dente. Drain and set aside.
2. Season the chicken strips with Cajun seasoning.
3. Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook for 5-6 minutes, or until browned and cooked through. Remove from the skillet and set aside.
4. In the same skillet, add the sliced bell peppers, onion, and garlic. Sauté for 4-5 minutes, or until the vegetables are tender.
5. Add the heavy cream, chicken broth, Parmesan cheese, salt, black pepper, and red pepper flakes (if using). Stir until the sauce is smooth and slightly thickened.
6. Return the cooked chicken to the skillet and stir to combine. Add the cooked pasta and toss until everything is evenly coated in the sauce.
7. Garnish with fresh parsley and serve immediately.
