Directions:
1. In a food processor, combine the dates and nuts. Pulse until the mixture is finely chopped and sticky.
2. Add the cocoa powder, chia seeds, vanilla extract, and salt. Process until the ingredients form a cohesive mixture.
3. Roll the mixture into small balls, about 1 inch in diameter.
4. If desired, roll the balls in shredded coconut for an extra touch of flavor and texture.
5. Place the energy balls on a plate or tray and refrigerate for 30 minutes to firm up.
6. Store in an airtight container in the refrigerator for up to two weeks.
