Christmas Horseradish and Herb Prime Rib

Ingredients:
– 1 (6-8 lb) bone-in prime rib roast
– 2 tablespoons olive oil
– 4 cloves garlic, minced
– 3 tablespoons prepared horseradish
– 2 tablespoons fresh rosemary, chopped
– 2 tablespoons fresh thyme, chopped
– 1 tablespoon kosher salt
– 1 tablespoon black pepper

Directions:
1. Preheat your oven to 450°F. Place the prime rib on a rack in a roasting pan.
2. In a small bowl, mix olive oil, garlic, horseradish, rosemary, thyme, salt, and pepper into a paste.
3. Rub the paste evenly over the prime rib, ensuring it’s fully coated.
4. Roast the prime rib for 20 minutes at 450°F to sear the exterior.
5. Reduce the oven temperature to 325°F and continue roasting until the internal temperature reaches 125°F for medium-rare, about 1.5–2 hours (use a meat thermometer for accuracy).
6. Remove the prime rib from the oven and let it rest for 20 minutes before carving.
7. Serve with your favorite holiday sides and a dollop of horseradish cream for extra zing!
