BAKED HASSELBACK POTATOES

INGREDIENTS
8 medium potatoes
Diced bacon no measurements needed
2 tbsp Olive Oil
1 tbsp of Robertson roasted potato spice
1 tsp Garlic Powder
1 cup of Cheddar cheese, grated
1 tbsp chives , finely chopped
Method :

Wash the potatoes thoroughly.
Use a food brush or cloths to remove dirt.
Cut potatoes into thin slices but avoid cutting all the way through.
Place them into a baking tray.

In a small bowl, combine olive oil,potato spice and garlic powder. Brush each potato with this mixture .
Bake in a preheated oven at 200°C for 40 minutes.

Take the tray out and fill the gaps with cheese and bacon slices. Bake for a further 15 minutes or until the bacon is done.
Top it with more cheese while still hot and garnish with chives.
