ย Ingredients:
For the Cake:
– 1 3/4 cups all-purpose flour
– 3/4 cup unsweetened cocoa powder
– 2 cups granulated sugar
– 1 1/2 teaspoons baking soda
– 1 1/2 teaspoons baking powder
– 1 teaspoon salt
– 2 large eggs
– 1 cup whole milk
– 1/2 cup vegetable oil
– 2 teaspoons vanilla extract
– 1 cup boiling water
For the Fudge Frosting:
– 1 cup unsalted butter, softened
– 3 1/2 cups powdered sugar
– 1 cup unsweetened cocoa powder
– 1/2 cup heavy cream
– 1 teaspoon vanilla extract
– Pinch of salt
Directions:
1. Preheat oven to 350ยฐF. Grease and flour two 9-inch round cake pans.
2. In a large bowl, whisk together the flour, cocoa powder, sugar, baking soda, baking powder, and salt.
3. Add the eggs, milk, vegetable oil, and vanilla extract to the dry ingredients. Beat on medium speed until smooth. Gradually add the boiling water and mix until well incorporated. The batter will be thin.
4. Divide the batter evenly between the prepared pans. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean. Cool in pans for 10 minutes, then transfer to a wire rack to cool completely.
5. For the frosting, beat the butter in a large bowl until creamy. Add the powdered sugar, cocoa powder, heavy cream, vanilla, and salt. Beat on medium-high speed until smooth and fluffy.
6. Once the cakes are cool, place one layer on a serving plate. Spread a generous amount of frosting on top. Place the second layer on top and frost the top and sides of the cake.
