Ingredients:
– 1 ½ cups all-purpose flour

– ⅓ cup granulated sugar
– 2 large eggs
– ½ cup whole milk

– 2 cups apples, peeled and finely diced (Granny Smith or Honeycrisp work well)
– Vegetable oil, for frying
For the Glaze:
– 1 cup powdered sugar
– 3 tablespoons milk
– ½ teaspoon vanilla extract
Directions:
1. In a medium bowl, whisk together the flour, baking powder, salt, cinnamon, and granulated sugar.
2. In a separate bowl, whisk the eggs, milk, and vanilla extract. Stir the wet ingredients into the dry ingredients until just combined. Add the melted butter and fold in the diced apples.
3. Heat oil in a deep skillet or pot to 350°F (175°C). Line a plate with paper towels.
4. Using a small cookie scoop or spoon, drop tablespoon-sized portions of batter into the hot oil. Fry 4-5 fritters at a time to avoid overcrowding. Cook for 2-3 minutes per side, or until golden brown.
5. Remove the fritters with a slotted spoon and drain on the paper towel-lined plate. Repeat with the remaining batter.
6. For the glaze, whisk powdered sugar, milk, and vanilla extract until smooth. Drizzle or dip the fritters in the glaze while still warm. Let set for a few minutes before serving.
